These sliders will be the hit of your game day party! Marinate chicken overnight in the refrigerator then grill the next day. On toasted slider buns, layer grilled chicken pieces drizzled with a tiny amount of honey. Top with crisp lettuce, homegrown sliced tomato, and cilantro lime aioli. To make the cilantro lime aioli: Mix your favorite mayonnaise, fresh lime juice and chopped cilantro together. Grilled Cilantro Lime Chicken Sliders
• Cilantro Lime Aioli (recipe below)
• 3 tablespoons soy sauce
• 3 tablespoons fresh lime juice
• Zest from one lime
• 1 tablespoon vegetable oil
• 1/2 cup honey
• 1 teaspoon ground ginger
• 1/4 teaspoon garlic powder
• 1 teaspoon kosher salt
• 1 tablespoon Sriracha
• 1/4 cup chopped cilantro
• 1 pound skinless, boneless, chicken breasts
• Slider rolls
• Garnish with honey, lettuce, tomato, and cilantro lime aioli , sriracha
To make the cilantro lime aioli: Mix your favorite mayonnaise, fresh lime juice and chopped cilantro together. Taste and adjust flavors.
Place soy sauce through chopped cilantro in a 1 gallon zip-top bag. Seal bag then mash contents to combine. Reserve 1/4th of marinade to use as a finishing sauce over cooked chicken. Store reserved marinade in refrigerator until ready to use. Pound chicken into an even 1-inch thickness. Open zip-top bag and add chicken. Marinate in refrigerator overnight.
Remove chicken from refrigerator 30 minutes before you plan to grill. Remove reserved marinade from refrigerator and heat in microwave until room temperature. Set aside. Grill chicken until cooked through and internal temperature is 165ºF. Place chicken on a platter, pour reserved marinade on top, and cover with foil. Let chicken rest 10 minutes. Cut into pieces to fit sliders. Toast slider buns. Garnish with a drizzle of honey, lettuce, tomato, and cilantro lime aioli. Makes 6-8 sliders.
